Coffee as an Art

The greatest chefs in all the land
Have lines outside their door
The finest cuts of meat are used
Fresh vegetables galore
But coffee is a dish that most
Folks just don’t understand
And like the finest cuts of meat
Can soon get out of hand
There’re stages coffee beans go through
And each one has demands
From planting down to roasting
Each brand has its own commands
Commercial brands on grocery shelves
Can be likened to ground beef
They all might look and smell the same
But they have their own motif
Their pricier companions
Are a cut above in taste
For some the extra money spent
Is too much of a waste
Then you get into the finer blends
Like the New York strip’s renown
These you’ll have to order
In a coffee shop downtown
But when you get to Prime Rib
It’s the single source gourmet
Who knows just where to find the best
That was roasted yesterday
Each one has a flavor
And a method they exhort
Each one has their reasons
Why, it’s almost like a sport
A rare bean is a light roast
Where the flavor can be found
A higher caffeine content
Gets your ass up off the ground
The medium is balanced
With some flavor from the roast
Like filet cooked on the grill
Quite popular with most
If you like your steak well done
My friend, the dark roast is for you
You get a bolder flavor
But the floral hints are through
Most will never get this far
To them, a cup’s a cup
But a coffee connoisseur will know
How far the heat’s turned up
They’ll tell you just how long
The pot sat on a burner hot
But a freshly brewed exotic
Man! That really hits the spot
All in all it comes back down
To how you like your steaks
If you sear both sides or cook it through
You know just what it takes
No one’s casting shade
If you like the darker roasts
No one is to blame
If with a light roast you will toast
Myself I like the medium
My steaks, just a bit rare
You get the best of both worlds
And that seems to me, quite fair
